Get ready for an egg-straordinary summer!
I was never one to eat eggs. While I much prefer them slathered in ketchup or cooked with a plethora of vegetables, cheese and bacon, I have been exploring my egg options! I found some yummy options and they are somewhat healthy. Grab a few of these nutritious little packages and create something yummy today!
Here are a few ideas to get you started.
Breakfast Egg Spread:
6 hard boiled eggs, peeled and chopped
1/4 C ranch or creamy spinach refrigerated dip
1/4 tsp salt
1/4 tsp pepper
2 Tbs chopped bacon
4 egg whites at room temp
1/2 tsp cream of tartar
1 3/4 C confectioners sugar
2 C ground almonds
Beat egg whites and cream of tartar until foamy, slowly add in sugar 2 Tbs at a time and stop when meringue reaches glossy stiff peaks. Fold in almonds. Pip onto baking sheets lined with parchment. Bake at 225 for 1 hour. Turn off the oven and let in the oven for an additional hour to dry. Store in an air tight container.
